Adzuki Beans

Adzuki beans are a small, deep red Vigna with a distinctive white ridge along the hilum, contracted principally for sweet paste manufacture in East Asian food processing.

Colour depth and uniformity decide an adzuki lot, because the end use is usually a visible red paste. The white hilum ridge is the identifying feature that separates adzuki from small red beans of other species.
