The commercial characteristic that governs this line is intolerance of discolouration. On a white seed, weather staining, storage marking and heat damage are immediately visible, and there is nowhere for a defect to hide. That is why the discolouration tolerance in a white bean contract is normally tighter than for coloured types, and why colour sorting is close to standard rather than optional.
East African supply comes principally from Ethiopia, where there is an established white bean trade, with Tanzanian material available as well. As with all beans in the region, size is contracted as count per 100 g and the available band depends on the crop.
Canning buyers will run their own process trial before approving an origin, assessing how the bean behaves on soaking and cooking and whether it holds colour and shape. A sample sent early is worth more than an extended specification.
