Black Gram

Black gram — urad in the South Asian trade — is a small black-coated pulse of the same genus as mung beans, contracted whole for dal milling and batter production.

The seed is small, oblong and black-coated over a cream cotyledon. Milling removes the coat to produce urad dal, and the split and dehulled forms are what most South Asian food manufacture actually uses.

Stone, soil and pod fragments are removed by destoning and aspiration, and checked on the composite sample.

Small pulses are bruchid-prone in store. Fumigation is specification and destination dependent.
