Green Lentils

Green lentils are contracted whole, with the seed coat on, and are specified by size class — the parameter that separates a large green lentil from a small one commercially.

Unlike red lentils, green lentils hold their shape through cooking. That makes them the lentil for salads, side dishes and canning, and it makes seed size and coat integrity the parameters buyers judge.
