Pinto Beans

Pinto beans carry a beige background with red-brown mottling that fades on cooking, and are contracted principally for canning and refried bean manufacture.

The mottled pattern that names the bean disappears in the pot, which is why canners and refried manufacturers judge pinto lots on cooked texture and skin integrity rather than on raw appearance alone.
